French Onion Soup on a Cold Winter's Eve - 10 Days till Christmas!

French Onion Soup

1 pound stew meat or small roast
4 cups beef consume
1/4 cup + 4 tsp butter
2 medium onions, thinly sliced
4 one inch sliced French bread
4 slices mozzarella cheese, 1 oz each
In the morning place meat and 3-1/2 cups beef consume in a crockpot. Melt 1/4 cup butter in a skillet. Add onions to butter. Cook, stirring frequently, over medium-low heat until onions are caramelized, about 10-15 minutes. Pour remaining 1/2 cup of consume into skillet, then transfer onions and broth into crockpot. Set to low and cook all day. Just before you're ready to serve, remove meat from crockpot and shred. If using roast, slice off one pound and reserve remaining roast for another meal, shredding the one pound. Return meat to crockpot. Slice French bread, spread 1 tsp butter on each slice and top with cheese. Place under broiler until golden color and bubbly, moving bread if necessary to toast evenly. Divide soup into four bowls and top each bowl with cheesy bread.
