Nicky's Salad

My friend Nicky's Ketones success story was recently featured in the Amador Ledger!  She'd lost 45 pounds at the time of the article, and still continues to lose. She told me that when she goes out to eat she always orders a Cobb salad.  She recently posted this lovely photo of a salad I'd like to eat any day of the week!  She also said, "I am so happy with the progress I've made with your help!"  It makes my heart glad to hear reader's  success stories as they put Ketones Aren't From Motown into practice!

Cherilyn's Fresh Zucchini & Carrot Fritters

Cherilyn's Fresh Zucchini & Carrot Fritters

I'm not big on zucchini but these are so tasty! I have officially been converted!

1 medium zucchini,grated

2 large carrots, peeled and grated

1 tsp salt

6 green onions, sliced

3 eggs, beaten

1/4 fresh dill, chopped

2 Tbsp fresh tarragon, chopped

2 Tbsp fresh parsley, chopped

1/2 cup almond flour

salt & black pepper to taste
3 Tbsp butter, melted
3 Tbsp olive oil

Toss zucchini and carrot with salt and let set in colander 30 minutes, then squeeze to remove excess moisture. Roll veggies in a cloth to dry.  

Combine the grated veggies, onions, eggs, and chopped herbs in a mixing bowl. Mix well then add the flour, baking powder and pepper. Stir well.

Combine the butter and oil. Heat a 12 inch skillet over medium-high heat. Add 2 tablespoons of the butter mixture to pan and coat evenly.

Add 1/4 cup of the zucchini batter, flattening the fritters with a spatula. cook for 2-3 minutes per side, or until browned and cooked through. 

Remove fritters from pan and set on paper towels for a minute.

Wipe excess butter from skillet then repeat the process to make 8 fritters. Serve immediately.

I introduced a similar recipe at Christmas but Meringue Cookies can be used as an object lesson to teach children about the resurrection of Christ! Very sweet...in more ways than one!

Easter Story Cookies

**To be made the evening before Easter

1/2 c. whole pecans  

1 tsp. vinegar

3 large egg whites            

A pinch of salt

1 c. sugar                   

Ziplock baggie

Wooden spoon      

 Tape 

Bible

Preheat oven to 300F. Place pecans in zipper baggie and let children beat them with the wooden  spoon to break into small pieces.  Explain that after Jesus was arrested, He  was beaten by the Roman soldiers.  Read John 19:1-3 Let each child smell the vinegar.  Put 1 tsp. vinegar into mixing bowl.  Explain that when Jesus was thirsty on the cross He was given vinegar to drink.  Read John 19:28-30. Add egg whites to vinegar.  Eggs represent life.  Explain that Jesus gave His  life to give us life.  Read John 10:10-11. Sprinkle a little salt into each child's hand.  Let them taste it and brush the rest into the bowl.  Explain that this represents the salty tears shed by  Jesus' followers and the bitterness of our own sin.  Read Luke: 23:27. So far the ingredients are not very appetizing.  Add 1/2 c sugar.  Explain that  the sweetest part of the story is that Jesus died because He loves us.  He wants us to know and belong to Him.  Read Psalm 34:8 and John 3:16. Beat with a mixer on high speed for up to 15 minutes, until stiff peaks are formed.  Explain that the color white represents the purity in God's eyes for  those who’s sins have been cleansed by Jesus' death.  Read Isaiah 1:18 and 1John  3:1-3. Fold in broken nuts.  Drop by teaspoons onto a wax paper covered cookie sheet.   Explain that each mound represents the rocky tomb where Jesus' body was laid. Read Matt 27:57-60. Put the cookie sheet in the oven, close the door and **turn the oven OFF.  Give each child a piece of tape and seal the oven door.  Explain that Jesus' tomb was sealed.  Read Matt. 27:65-66. 
NOW GO TO BED!  Explain that they may feel sad to leave the cookies in the oven overnight.  Jesus' followers were in despair when the tomb was sealed.  Read  John 16:20 and 22.
On Easter morning, open the oven and give everyone a cookie.  Notice the  cracked surface and take a bite.  The cookies are hollow!  On the first  Easter morning, Jesus followers were amazed to find the tomb open and empty. Read Matt. 28:1-9.

The Mystery Revealed...

                The mystery, having been hidden, was finally revealed in its fullness in the Word of God.  This mystery, says Paul, is the manifold wisdom of God and the grace of God, given to those willing to be reconciled to God, making them heirs and partakers of the promise of the coming Messiah, that is, Jesus Christ.

                With this in mind, it is a little mind blowing to recognize that I am part of this manifold wisdom on display! – the wisdom that angels and the rulers in the spiritual realms have longed to look into …but have not been able to comprehend. 

What a concept: God, working in me so that I, in turn, give Him glory…

Why would the Divine entrust humans (me?) to display His glory?  

                As I consider the admonition to 'put off my old self and be made new in the attitude of my mind',  I recognize how far I fall short.  The Psalmist says the words of my mouth spring from my heart…but sometimes, from the deep well of my selfishness, ugly words bubble to the surface…words that have torn, and rent, and scarred relationships.    

                As bizarre as this sounds, the manifold wisdom of God can be seen in action when we recognize our inability to 'be good'. Ephesians says that God is able to do immeasurably more than all we ask or imagine according to HIS POWER that is already at work within us. The unfolding of this wisdom, which brings God glory, is not dependent on you or me. It is according to Him and His power. Again I ask, WHY would He choose humans (me?) to display His glory?

                Today as I prayed I felt the urge to remind the spiritual rulers in the heavenly realms, and myself, that My God’s wisdom is being revealed in me. Did I mention that this is happening because of His power and not because of anything I can or will to do? That God would use me to display His wisdom before heavenly beings is beyond comprehension to me. Could it be possible?  Read Ephesians chapter three and see what you think!
