Ketones vs. Dr. Atkins!



Somebody recently compared Ketones Aren't From Motown to The Atkin's Diet. While there are similarities,  'Ketones' teaches you the science behind weight loss and how to use that knowledge to your benefit. Understanding Ketosis means you don't have to eat meat all the time -- in fact you can eat anything you want to when you understand the relationship between carbohydrates, glucose and what happens when you store up glycogen -- and when you deplete your glycogen storage.  Understanding Ketosis puts you in control over whether you're gaining, maintaining or losing weight.  I'm not sure Dr. Atkin's ever empowered his followers with such knowledge!

I Am Normally Not One To Boast...



I opened my Facebook to find this post. It starts with "I am normally not one to boast".  Not wanting to steal my reader's thunder, I (humbly) feel like I am sharing her success!  Though she deserves all the credit for her exciting results I feel such a satisfaction that she's benefited from my research in Ketones Aren't From Motown!

Stacie's Jalapeno Poppers ~ Wow-Wee!

My friend Stacie, inventor of the Super Bowl Bacon Chips & Guacamole recipe, brought these amazing poppers to a get-together the other night and I couldn't get enough of them! A Super Low Carb treat that taste Super Good. 

12 jalapeno peppers
12 slices of bacon
8 oz cream cheese, softened
1 cup cheddar cheese, shredded
1 clove of garlic, finely minced
1/4 tsp garlic salt

Preheat oven to 400.  Cook bacon in microwave or in frying pan until cooked 'rare' - edible but still flexible and definitely not crispy.  While bacon is cooking shred cheese and wash and slice peppers length wise and remove seeds.*  Mix cheeses and garlic and spoon into peppers, dividing evenly between the 24 peppers. Once bacon is cooled enough to handle cut each slice in half and wrap each pepper with bacon and place each pepper on baking sheet.  Bake for 25 minutes then switch to broil and cook for 2 minutes longer.  Remove from oven and eat hot or cool, and try to stop at four…  I betcha can't! Makes 24 poppers.  *If you like heat, then leave the seeds, but consider who'll be eating them - they've got a kick without the seeds…then again, if you want them all to yourself, leave the seeds!!

Low Carb Cheesecake Bites

Earlier this year I introduced one of my favorite low carb recipes, Shara's Cheesy Crustless Quiche.  Here is my new fav, an adaptation of Shara's recipe with a sweet twist. 

1/4 cup butter (1/2 stick).  
1/4 cup cornstarch
3 large eggs
1/2 cup cream             
3 oz cream cheese (softened)  
1 cups 2% cottage cheese
2 cups jack cheese,shredded        
1/2 tsp salt 
1/4 cup sugar
1/4 cup Splenda
1/2 tsp baking powder

Melt butter in saucepan, add corn starch and cook until smooth.  Set aside.  Beat eggs, add cream, jack, cottage and cream cheeses, baking powder, salt, Splenda and sugar. Add butter/cornstarch to egg mixture. Stir until blended.*
Pour into a 8 x 8 nonstick baking pan.  Bake at 350 uncovered for 30-35 minutes or until top begins to turn golden. Cool and cut into 1"x1" squares. Chill in frig at least a half hour before serving. Yum!
Makes 64, bite sized servings.
