Susie's Manna
What Is It? |
History tells of an ancient people who escaped a life of slave labor and lived
in the deserts outside of Egypt. Once
they'd eaten all the food they'd carried they cried out to their God for
help. Help fell from heaven in a form
the people had never seen. The heavenly
sustenance was called "Manna", which in the ancients' language means,
"What is it?!"
Susie's "Manna", made with flax seed and coconut oil, is super charged with high nut-protein, 'good' fats, fiber, and is gluten free. It is a variation of the Almond Flour Pancake in my book, Ketones Aren't From Motown, and can be used as a base for many dishes and changed up to make it sweet or spicy. Over the next month I plan to reveal some ways of using "Manna", but for now here is the basic recipe. Susie spreads peanut butter between two of these for her Morning Manna before hurrying off to work.
Recipe for one of Susie's Manna
1 tsp coconut oil
1 large egg
1 Tbsp almond flour
1 Tbsp flax seed meal
1 Tbsp olive oil
dash salt (optional)
In small bowl whisk egg till mixed well. Add olive oils and stir. Add almond flour, flax seed meal and salt, if desired, and stir well. Heat coconut oil in a small skillet on medium heat. Once coconut oil is melted pour batter in, cover and let cook about 4 minutes or until the underside is golden brown. Flip and cook a minute longer. Use in place of bread or tortilla.
