Peanut Butter Truffles - Low Carb Style!
One of my family's all-time favorite Christmas treats! The kids love to to help make them and even
more to eat them. Try this low carb version of a favorite
Low Carb Peanut Butter Truffles
2 Tbsp butter, softened
1/4 cup creamy peanut butter, room temperature
1/4 cup + 2 tsp Splenda
2 tsp cocoa powder
Line an 8x8 baking dish or plate with wax paper. In a small bowl mix 2 tsp Splenda and 2 tsp
cocoa powder and set aside. In a
separate bowl mix butter and peanut butter till blended. Add 1/4 cup Splenda.
Drop by heaping teaspoonful's on to wax lined pan, making ten 1-inch
'balls'. Place in freezer about 20
minutes or until firm. Gently roll each
ball between palms to shape into nicely shaped balls. Roll each ball in cocoa
mix.
