Conni's Oh So Good Chicken!


This is moist and delicious and leaves you wanting more. Best of all has only a trace of carbohydrates!

4 large, boneless, skinless chicken breasts
1 cup real mayonnaise
1/2 cup Parmesan cheese, grated
1 tsp garlic powder
1/2 tsp dried basil
1/2 tsp dried rosemary
Salt & pepper to taste

Preheat oven to 375. Slice chicken half to make six 4oz servings. In small bowl mix mayo, cheese and garlic.  Smear over chicken, top and bottom and place on baking sheet.  Bake for 45 minutes. Makes six servings.

Cajun Rubbed Steak - 4 Days to Christmas and counting!



Cajun Rubbed Steak


This spicy rub gives a burst of flavor with every bite! Best of all it has zero carbs. Photo shown is paired with Hollandaise Lace Broccoli.

1-1/2 Tbsp chili powder
1 Tbsp garlic powder
1 tsp cayenne
2 tsp black pepper
1 tsp oregano
1 tsp oregano
1 tsp ground thyme
1 tsp Splenda
8 oz top sirloin steak

Mix seasonings and Splenda together and rub on steak.  Let sit at room temperature, at least 15 minutes. Barbeque on hot grill at medium heat for 3-4 minutes on each side or until desired doneness.

Hollandaise Laced Broccoli - 5 days till Christmas

Counting down to Christmas I thought I'd post a vegi to remind us that it's not all about egg nog and sweets this time of year. (Oh… but they're so good …and what other time of year do we indulge so freely?)  While this IS a good 4 u vegetable, it's low carb, gluten free has 45 proteins and is still feels a little indulgent with the creamy hollandaise sauce.

1 head of broccoli
4 egg yolks
1-¼Tbsp lemon juice
½ cup butter, melted
Pinch of cayenne

Wash broccoli and cut 16 spears about 5inches long. Steam for 5-6 minutes. Meanwhile,
in a small bowl whisk, egg yolks and lemon juice about a minute until mixture is thick and nearly doubled.  Place mixture in top of double boiler or place bowl over sauce pan of simmering water, whisking constantly.  Do not let the bottom of the bowl touch the water or the eggs may cook too quickly.  Slowly add melted butter as you whisk and whisk about 4 minutes until mixture thickens and is doubled in volume.  Remove from heat and whisk in cayenne.  Place 4 spears of broccoli on each plate and top with 3 tablespoons hollandaise sauce.

One of my favorite naughty treats is a cheese Danish from a local bakery - a favorite because it's delicious and because of the cheese filling it has only 20 carbs - very low for a delightful indulgence. However, if you want to be in ketosis, 20 carbs might be going too far. I got to thinking cream cheese and Splenda can go a long way for a low carb treat high in protein and fat.  Here's just one idea… if it were summer you could bet I'd be slicing a fresh strawberry to top off my piece!

1-1/2 cup almond flour
1/3 butter, melted
1 Tbsp + 3 Tbsp Splenda
1 package (8oz) cream cheese, softened
1-1/2 tsp lemon juice*

Heat oven to 375. Mix flour, 1 tablespoon Splenda and butter together and press firmly into 8 inch pie plate. Place on cookie sheet and bake 12 minutes. Cool. While crust is baking, blend cream cheese, remaining Splenda and juice. Mix until smooth. Fold into cooled crust and chill 1 hour.  Slice into 12 servings.  For a change try 1 tsp of almond extract in place of lemon juice.

Three Cheese Portabella Pizza - 7 Days to Christmas!

2 steak size portabella mushrooms 
1/2 cup pizza sauce 
1/2 cup feta cheese
1/4 cup shredded mozzarella
1/4 cup shredded cheddar
2 Tbsp olive oil

Wish the photo turned out better because this is one of my favorite gluten free alternatives and it's really good! 
Preheat oven to 375.  Remove stem and set aside. Gently scrape black fins from inside mushroom caps. Rinse well.  Brush inside of each mushroom cap with 1 tablespoon olive oil and bake for 5 minutes. Meanwhile, wash stem and chop for use as pizza topping. Remove caps from oven, spread each with 1/4 cup pizza sauce (I use Ragu Homestyle) and top each with half the cheeses and chopped stems . Bake an additional 20 minutes.  Serves two.
